Swedish Rhubarb Crumble (Smulpaj)
Rhubarb pie is said to be one of the signature dishes of Sweden. This one is quick and easy to make and it brings me back to my grandmas kitchen.
Ingredients
Base
About 700 grams of rhubarb, cleaned and cut into 1 cm (½") long pieces
1 tablespoon grounded cinnamon
1 tablespoon grounded cardamom
1 tablespoon granulated sugar
3 tablespoons potato flour (starch)
1 teaspoon of salt
Crunch
125 grams of butter
2 deciliters of oatmeal
1 deciliter wheat flour
0.5 deciliters of granulated sugar
0.5 teaspoon of salt
For serving
Vanilla sauce or vanilla ice cream or whipped cream
Preparation
Base
Heat the oven to 200 degrees.
Put the rhubarb pieces together with all the base ingredients in a plastic bag and shake it until the base mix is distributed on all the pieces.
Place the rhubarb in the bottom of a pie dish. If you use a silicone mold, you don't need to grease it.
Crunch
5. Mix cubed butter with sugar, oatmeal, wheat flour and salt into a dough;
either in a bowl or food processor.
6. Spread the dough over the rhubarb.
7. Bake in the middle of the oven until the pie has a light brown color - around 25 minutes.
8. Enjoy with the serving of your choice.
