Swedish Vanilla Dream Cookies (Vaniljdrömmar)
These crispy cookies are literally a dream (that's how they are named). This recipe I got from my great-aunt, who taught me how to make them. Grab one after your dinner or serve them as a snack together with a fruit, some nut butter and a glass of milk.
Ingredients
100 grams of butter
2 deciliters of granulated sugar
1 deciliter rapeseed oil
3 teaspoons vanilla sugar
1 teaspoon of salt
4 deciliters of wheat flour
Preparation
Set the oven to 150°.
Mix room tempered butter and sugar with an electric beater for 1-2 minutes.
Add the oil a little at a time while beating.
Mix wheat flour, salt and vanilla sugar in a bowl.
Add the flour mixture to the butter and sugar mixture. Blend together into a dough. When the dough is ready, it will be a little sticky.
Prepare two baking sheets with parchment paper. Roll the cookie dough into two lengths and cut each length into small equal sized pieces.
Roll with floured fingers into small balls. Place the balls on the baking paper a few centimeters apart as they will float out a little in the oven.
Bake the dreams in the middle of the oven for 15-20 minutes. They should turn pale yellow and crack a little on top.
Take them out and let them cool completely on the trays, otherwise they will crumble easily.
